We love ribs and when we are lucky enough to find them, beef ribs make for a special treat. We keep the seasoning simple with kosher salt and black pepper. The meat on these ribs have an intense marbling and we want the beefy flavor and smoke to really shine in this preparation.
Fire up your smoker and cook at 225 °F until the ribs are done. Since the ribs are heavily marbled our desired internal temperature is between 160 °F and 180 °F. We use a temperature probe to verify doneness and know the ribs are complete when the probes resistance is like sticking it in warm butter.
Remove the ribs from heat and allow to rest for 5-10 minutes. Serve and enjoy.
