Pat the chicken drumsticks dry with a paper towel. Generously season the chicken with kosher salt, garlic powder, and freshly ground black pepper. Place the chicken drumsticks on a wire rack set over a baking sheet.

Step 1 - Pre-Heat

Temperature: 160 °F
Steam: Off

Step 2 - Cook

Time: 45 Minutes

Once the oven is preheated, place the chicken drumsticks in the oven and cook for 45 minutes. Remove the chicken from the oven and brush with olive oil to help with crisping.

Step 3 - Sear

Temperature: 482 °F
Steam: Off

Time: 10 Minutes

Return the chicken to the oven and sear until the skin is golden brown, approximately 10 minutes. Once done remove the chicken drumsticks from the oven and allow to rest for 5 minutes before serving.
