Preparation
Pat the chicken legs quarters with a paper towel. Generously season the chicken with kosher salt, smoked paprika, and freshly ground black pepper. Place the chicken leg quarters on a wire rack set over a baking sheet. Prepare the mayonnaise sauce by mixing minced garlic with mayonnaise. Set the sauce aside for later use.

Once the oven is preheated, place the chicken in the oven and cook for 50 minutes. Remove the chicken from the oven and brush with mayonnaise sauce to help with crisping.
