Preheat the oven to 350 °F. When ready to cook season the ribeye steak with kosher salt and freshly ground black pepper. Heat a cast iron pan over high heat and drizzle with avocado oil. When the skillet reaches temperature add the ribeye steak and sear both sides until a beautiful crust develops.
When complete place the entire skillet with steak into the oven and cook until your desired internal temperature is reached. In this case we cooked to 130 °F. When done remove from heat and allow to rest at least 5 minutes before serving.
