Multigrain Bread
Ingredients
Preparation
Whisk together warm milk, water, sugar, and active dry yeast. Let the mixture sit at room temperature for 10 minutes or until foamy and bubbly on the surface.
Next, add in the olive oil, two eggs, kosher salt, and whisk to combine. Add all purpose flour, whole wheat flour, and potato flour. Mix the flour mixture with the wet ingredients. Knead the dough by hand or using a dough hook on an electric stand-up mixer until you get a window pane consistency. A window pane consistency is reached when you can stretch the dough and see through it without ripping it. Remove the dough from the mixing bowl and shape it into a ball. Apply a light coat of olive oil in a large size mixing bowl and insert the dough. Cover the dough with plastic wrap and put it in a warm place to rise about 2 hours, or until doubled in size.
Remove the dough from the bowl and gently deflate. Shape the dough into a 16-inch log. Place the pre-shaped dough into a lightly greased bread pan. Cover the pan with plastic wrap and let it rise for 60 minutes. When the dough has reached the rim of the pan, pre-heat the oven.

Brush the top of the loaf with olive oil and sprinkle with rolled oats. Place the bread into the oven and bake for 15 minutes with 100% steam.

After baking the bread for 15 minutes with 100% steam reconfigure your own to turn steam off and bake for another 15 minutes.

When the top of the bread has reached a nice golden brown color, remove the loaf from the oven and cool it on a wire rack before slicing to preserve a nice even texture.
