Lamb chops are a timeless classic and make for a very special meal. They are usually sold as a full rack of lamb. If so carefully slice into individual lamb chops paying careful attention to portion them equally in width to promote even cooking. Take a sprig of rosemary and remove the leaves from the stem. Coarsely chop the rosemary into smaller pieces.
In a large mixing bowl add the rosemary, kosher salt, freshly ground black pepper, and minced garlic. Toss to evenly coat each lamb chop with the homemade seasoning.
Grill the lamb chops over high heat until your desired internal temperature is reached. The USDA recommends an internal temperature of 145 °F.
Once done remove from heat and allow to rest for 5 minutes. Serve and enjoy!
