Pork Tenderloin and Herb Sauce With the Anova Precision Oven

This quick and easy to make pork tenderloin dish is healthy and packed full of flavor. First we'll preheat the Anova Precision Oven.
Step 1 - Pre Heat

Temperature: 140 °F
Steam: 100%
Season the pork tenderloin with kosher salt, freshly ground black pepper, garlic powder, and paprika. Insert the probe in the thickest part of the pork tenderloin.
Step 2 - Cook Pork

Cook the pork tenderloin until the probe target temperature reaches 140 °F. Remove the pork tenderloin from the oven and place on a stable working surface. Remove the probe and pat the pork tenderloin dry with a paper towel. Any excess moisture we can remove now will help during the searing process to bring out a pleasing color. Dab the pork tenderloin with a light coating of olive oil.

Temperature: 482 °F
Steam: Off
While the pork tenderloin is resting, we'll use that time to get the Anova Precision Oven up to temperature for the searing stage.
Step 4 - Sear

Sear the pork tenderloin for 10 minutes or until the skin is golden brown. Remove the pork tenderloin from the oven and let it rest for at least 5 minutes.
Meanwhile, we'll make the herb sauce. Add the chopped parsley, cilantro, minced garlic, and pepper flakes to a small bowl. Stir in the olive oil, white wine vinegar, lemon juice, and zest. Next season the sauce with kosher salt and freshly ground black pepper. Slice the pork tenderloin as desired and drizzle the herb sauce over the pork tenderloin. Serve and enjoy!
