Sourdough Chocolate Muffins
Ingredients
Preparation
In a large mixing bowl, sift together all purpose flour, brown sugar, salt, baking powder, ground nutmeg, and cocoa powder. In a separate mixing bowl, whisk together all the wet ingredients: milk, one egg, peanut oil, sourdough starter discard, vanilla and almond extract.
Using a spoon or spatula, fold in the flour mixture and combine all of the ingredients. Next, add in the chocolate chips and mix to combine. Line a muffin tin with muffin liners or spray with nonstick spray. Divide the batter evenly between the 12 muffin cups. Sprinkle the top of the muffins with chopped hazelnuts, if desired.

Bake the muffins at 375 °F with 100% steam for 10 minutes.

Turn the steam off, lower the temperature to 350 °F and then bake the muffins for an additional 10 minutes. Remove the chocolate muffins from the oven and let it cool on a wire rack.
When we bake our sourdough chocolate muffins, we sprinkle half of our muffins with hazelnuts.
Here is a shot of our sourdough muffins without chopped hazelnuts. Both type of muffins are equally delicious.
