When things get busy and you need something quick, healthy, and delicious the Loco Moco is one of our favorites. Start by cooking the rice. Depending on which method you use plan ahead to make sure the rice is done when you are ready to serve.
Next cook the burger patty by heating a cast iron pan on high heat. Add a drizzle of avocado oil and 1 tablespoon of butter. Just before the butter begins to brown in color reduce heat to medium-high and insert your hamburger patty.
Cook both sides until a nice crust and color develops. Once the burger patty is done remove from heat and allow to rest. Meanwhile we'll make the sauce.
In the same cast iron pan, deglaze with the beef stock. Next add the soy sauce, Worcestershire Sauce, ketchup and mix over low heat. Our goal is to heat the ingredients to combine and if necessary simmer to reduce. When the ingredients are combined add the corn starch and stir. Once the corn starch is added, the sauce will thicken quickly. When the desired consistency is reached remove from heat.
Last fry the egg. Season with salt and pepper. When done remove from heat and begin building the dish. First place a generous scoop of rice. Next add the patty and drizzle with the warm sauce. Top with the fried egg and garnish as desired. Serve and enjoy.
