Split the chicken in half with heavy duty kitchen shears. Rub with olive oil, then generously season with kosher salt, freshly ground black pepper, garlic powder, and paprika. Place the chicken on the smoker and smoke with your favorite wood, in our case hickory, at 225 °F until an internal temperature of 150 °F is reached. Once complete, remove from heat and allow to rest for 5 minutes. Serve and enjoy!
