A whole beef tenderloin makes for an impressive presentation. This is our BBQ version of beef tenderloin. First we'll generously season the tenderloin with kosher salt and freshly ground black pepper. Next tightly wrap the tenderloin with fresh rosemary.
Next we'll fire up the BBQ and smoke with your favorite wood (hickory) at 300 °F until your desired internal temperature is reached, in our case 130 °F. When done remove from heat and let rest before serving. Plate, garnish, and enjoy!
