Preparation
Fresh pork, salt, and a lot of smoke is a match made in heaven. This simple to make meal only requires time, it's literally set and forget. In a bowl mix the kosher salt, black pepper, garlic powder, onion powder, and paprika to make a homemade rub. Generously season the pork ribs with the rub and set aside.
Next prepare your smoker or grill and with indirect heat smoke the ribs with hickory wood until the ribs are pull apart tender. A cook temperature of 225 °F usually takes about 4-6 hours to complete.
When the ribs are pull apart tender, generously season them with your BBQ sauce of choice. Smoke for another 5-10 minutes until the sauce sets. Once done remove from heat and allow to rest for 5 minutes. Serve and enjoy.
