Preparation
Season the rack of lamb with kosher salt and freshly ground black pepper. Insert the temperature probe into the thickest part of the lamb chop.

When the oven is preheated, insert the lamb rack and plug in the probe. Cook the lamb rack until the probe target temperature reaches 135 °F.

When the probe temperature of 135 °F, remove the rack of lamb form the oven and configure the Anova Precision Oven to sear using the settings below.

Remove the rack of lamb from the oven when a nice color develops. Let the lamb rack rest for 5 minutes before slicing and serving.
