Herb Roasted Chicken

Preparation
In a large container or mixing bowl combine light olive oil, softened salted butter, coarsely chopped rosemary leaves, chopped thyme leaves, minced garlic, kosher salt, and freshly ground black pepper. Place the chicken legs in the seasoning mixture and coat evenly. Cover the chicken legs and refrigerate for at least 2 hours to marinate the flavors.
When ready to cook, pre-heat the oven to 425 °F. Take the chicken legs and place them on a greased baking tray upside-down. Bake for 15 minutes. Turn the chicken legs once more and bake until the internal temperature of 165 °F is reached. When done remove the chicken from the oven and allow it to rest for 5 minutes. Garnish with fresh herbs and serve hot with your choice of sides.
