Hamburger Buns With the Anova Precision Oven
Ingredients
Preparation
In a stand-up mixer bowl combine warm milk (105 °F), water (105 °F), sugar, and active dry yeast. Whisk the contents well and allow it to sit at room temperature for 10 minutes.
Add the kosher salt and 2 eggs. Whisk to combine. Next, add the flour and knead the dough for 3 minutes on a medium speed setting until the dough is formed. Next, add 2 tablespoons of softened salted butter and then mix the dough for 7 minutes until the dough is no longer sticky and feels elastic.
Shape the dough into a ball and transfer it to a medium size mixing bowl. Cover the bowl with plastic wrap and let it proof at room temperature for an hour or until doubled in size.
Place the dough onto a lightly floured surface. Divide the dough into 8 equal pieces and form round balls. Gently flatten each ball into 3 inch discs.
Place the pre-shaped buns on a piece of parchment paper leaving about 2 inches between each other and cover the buns loosely with plastic wrap. Let the buns rise at room temperature for about 1 hour.

Whisk together 1 egg with 1 tablespoon of water. When ready to bake, lightly brush the buns on a baking sheet with the egg wash and sprinkle with sesame seeds, if desired. Place the buns into the oven and bake for 12 minutes. Melt 1 tablespoon of salted butter and set aside.

Bake the buns until light golden brown which should approximately be around the 12 minute mark. When done remove the buns from the oven and immediately brush them with melted butter. Cool the hamburger buns for 10 minutes on a wire rack.

Hamburgers pair well with a full-bodied Cabernet Sauvignon or a Malbec.
