Homemade Ramen Noodles

Preparation

In a medium size mixing bowl, add 1/2 cup of water and one teaspoon of potassium carbonate & sodium bi-carbonate (kansui). Next, sift together 2 cups of all purpose flour, 2 tablespoons of vital wheat gluten and add the mixture to the bowl with the wet ingredients. Using a spoon or a pair of chopsticks mix all of the ingredients until the flour and water mixture forms into clumps. Next use your hands and squeeze the dough clumps together into a ball and knead the dough for 2 minutes. The dough will feel slightly dry and that is normal. As the dough rests, it will become more hydrated. Place the dough into a zip lock bag and let it rest for 30 minutes at the room temperature.

Remove the dough from the bag and knead the dough for 2 to 3 minutes. Then set your pasta machine to the widest setting. Cut the dough in half and flatten each piece by hand. Feed the dough through the pasta machine several times, folding each piece in half each time. At first the dough will look very rough but will get smoother each time it is fed through the pasta machine.

Continue to roll the dough through the pasta machine until the desired thickness is reached. Pass the dough through the machine as you gradually reduce the thickness. Cut the dough into long strips of noodles with the pasta machine. We used a spaghetti cutter to make our ramen noodles. Generously sprinkle the ramen noodles with flour to prevent them from sticking.

When ready to serve bring a large pot of water to a boil. Add the noodles and cook for 2 minutes. Drain and serve with with a bowl of chicken broth or your favorite sauce.
