Fried Bacon

Preparation
While making fried chicken we realized that we had some homemade sugar cured and hickory smoked bacon sitting in the fridge. Of course we had to fry it.
Add the flour, kosher salt, freshly ground black pepper, garlic powder, and onion powder into a bowl. In a second bowl whisk an egg until thoroughly combined.
Heat peanut or canola oil to 350 °F in a tall pan. When ready to cook, coat the bacon with the egg yolk mixture, toss with dredge until evenly coated then fry until the bacon is done. This is usually indicated by the bacon floating to the top of the oil and the intensity of the bubbles being greatly reduced.
When done remove from the oil and allow it to cool and drain on a wire rack. This will keep the fried bacon crispy until ready to serve.
