Loco Moco
Ingredients
Preparation
Loco Moco is a popular dish usually credited to Hawaiian cuisine. This simple to make and delicious meal makes a great breakfast, lunch, or dinner.
Step 1
Cook the rice, we used a rice cooker.
Step 2
Season the ground beef with salt and pepper and shape two patties, 3 oz. each. Set aside until ready to cook.
Step 3
Slice the mushrooms into thin slices. Mince one clove of garlic and set aside.
Step 4
Melt 2 tablespoons of butter in a medium saucepan. Place the sliced mushrooms into the pan and cook over medium heat until brown. Add the minced garlic and cook for an additional 2 minutes stirring frequently. Pay careful attention to not burn the garlic.
Step 5
Remove the mushrooms and garlic from the saucepan and set aside.
Step 6
In a saucepan melt 2 tablespoons of butter and deglaze the pan. Sift 2 tablespoons of all purpose flour into the butter stirring vigorously until all the flour is incorporated evenly. Cook on medium heat until the gravy reaches a golden brown color. Add in the beef stock, stirring continuously, and cook until the gravy is smooth and thick.
Step 7
Add the soy sauce, fish sauce, and brown sugar.
Step 8
Add the reserved mushrooms and garlic to the gravy and stir. Keep the gravy warm over low heat until ready to serve.
Step 9
Heat a large cast iron skillet over medium high heat and add 2 tablespoons of avocado oil. When the avocado oil begins to smoke place the patties in the pan and cook to your preferred temperature. We grind our own beef and cook to medium. Unless you trust the source of your beef we recommend cooking to USDA guidelines (160 °F).
Step 10
Fry two eggs sunny-side-up.
Step 11
Plate the rice, mushroom gravy, beef patty, fried egg, and garnish with green onions. Enjoy!

The beef (3 oz.), egg, mushrooms, and rice (1 cup) make up the bulk of the meal weighing in at 531 calories per serving. The total batch of gravy hits 1,214 calories, however, we find that a 1/8th serving size provides more than enough for a nice meal (152 calories/serving).
