This burger is inspired by a famous Texas restaurant, can you guess which one? First we will start with the bacon. Heat a cast iron skillet over medium heat and cook the thick cut bacon until chewy. When done remove from heat and place over paper towels to drain the excess grease. Next we will cook the beef patties.
Place the same cast iron skillet over medium-high heat. The bacon fat will add to the flavor of the beef patty. Cook the beef patties until a nice crust and color form on both sides. Our goal is to cook the beef patties until a perfect medium-rare is reached in the center. When done remove from heat and allow to rest for at least 5 minutes.
While resting toast the hamburger buns with butter until a nice color develops. When done remove from heat and allow to cool.
When ready to serve build the burger by starting with the bottom bun. Add a generous layer of mayonnaise, add green leaf lettuce, and top with freshly sliced tomatoes. Next add two beef patties with cheddar cheese slices both on top and in-between. Finally add the thick-cut bacon and place the top bun. Serve and enjoy.
