Pork Tenderloin with Kalbi Marinade (Korean BBQ)

Preparation

In a small sauce pan mix the soy sauce, maple syrup, sesame oil, sake, black pepper (freshly ground preferred), garlic, ginger, and gochujang over medium heat and simmer for a couple of minutes to incorporate all of the ingredients and flavors together. While optional, the gochujang gives the marinade a spicy little kick and really enhances the pork flavor. If you prefer a sweeter flavor then discard the optional gochujang ingredient. Either way, your taste buds will be impressed.

Remove the marinade from heat and allow it to cool. Once at room temperature place the marinade and pork tenderloin into a container and marinate overnight. If you are in a pinch for time you can marinate for 2 hours, however, the flavor will be less intense.

Once complete, separate the pork tenderloin from the marinade and pat dry. Grill the pork tenderloin over charcoal until the desired internal temperature is reached. The USDA now says that an internal temperature of 145 °F is safe for consumption.

When the desired internal temperature is reached, remove the pork tenderloin from heat and allow it to rest for 5 minutes. Slice the pork tenderloin into 1 ounce medallions and garnish with your favorite sides.

This dish pairs well with a medium bodied Shiraz and/or Cabernet-Shiraz.

The total number of calories in this recipe's marinade may seem alarming at first, however, most of it is discarded prior to the final cooking stages. The majority of the calories will come from the pork tenderloin itself with a negligible amount (~10 cal. / serving) being added from the actual marinade. If you decide to reduce the marinade into a sauce, which is sinfully delicious, you'll want to take into consideration the additional calories (~95 cal. / serving).
