Preparation

Surprisingly, homemade pasta is really simple to make. Not only does it cook faster, but it tastes completely different in a better way. Here is our quick and simple recipe.

To make the pasta dough, mix together 00 flour, semolina flour, and 1/2 teaspoon of salt. Sift the mixture through a fine mesh strainer. Make a well in the middle of the flour and add 2 eggs. Using a spoon, beat together the eggs and begin to incorporate the flour starting with the inner rim of the well. Keep mixing the eggs and the flour in a circular motion until the dough comes together in a thick rough dough.

Then using your hands knead the dough for 3-5 minutes until the dough is elastic and sticky. Wrap the dough with a plastic wrap and let it rest at the room temperature for 30 minutes. When the pasta dough is rested, roll the dough into sheets and cut however you like.
