Preparation

As much as we love our BBQ, when given the chance to rotisserie, we'll always pick the second option. Nothing beats a well seasoned chunk of beef, pork, or chicken basting itself over hot coals and smoke. This virtually set and forget method of cooking will not only impresses your dinner guests, it's some of the best eating you'll ever get to experience.

Generously season the tri-tip with kosher salt, freshly ground black pepper, and garlic powder. We like to keep the seasoning simple because the rotisserie and smoke do all of the heavy lifting. For a more well done tri-tip, keep the spit at a high setting. If you prefer yours more rare then lower the spit. Be careful to not burn the tri-tip as if you go to low, you'll cook the outside before the inside ever gets a chance to reach temperature.

A rotisserie like BBQ is an experience. This cooking method is all about flavor and the trade off is speed. This is the tri-tip after 15 minutes of smoke. The fat is starting to absorb smoke slightly changing color.

This is the tri-tip after 30 minutes of smoke. A nice color is starting to form as the fat begins to render and baste itself with that amazing flavor! It also helps keep the meat tender and juicy.

We finally reached an internal temperature of 145 °F (medium) after 1 hour and 15 minutes into the cook. Pull the spit from the fire and allow an initial rest for 5 minutes. Once rested, remove the tri-tip from the spit and allow to rest for an additional 5 minutes. When ready, slice and garnish as desired and enjoy this amazing yet simple to make meal.
