Preparation

Every once in a while it is time to splurge and have a cheat day. With proper portion control you can enjoy the guilty pleasures of fried chicken and homemade buttermilk biscuits relatively guilt free. The perfectly seasoned fried chicken features a garlic dry rub topped with a spicy sauce. Pair with a freshly baked homemade buttermilk biscuits and your fried chicken is elevated to the next level.

Heat peanut oil to 300 °F in a tall pan.

We started with a whole chicken and removed both breasts. We find better value in buying the whole chicken and use the remainder of the meat for other dishes and the bones for chicken stock. Remove the skin and slice the chicken breasts into smaller strips. The goal is to reduce the size of the meat to promote quicker and more even cooking. We also want to cut the strips into visually appealing shapes.

Lightly season the the chicken strips with salt, freshly ground black pepper, and garlic powder.

Mix the panko, salt, freshly ground black pepper, and garlic powder into a bowl and set aside. We'll use this as the dredge for your chicken strips.

Beat an egg into a shallow bowl and dip the breast meat strips one by one into the dredge. Shake excess dredge from the chicken strips and fry until your desired temperature is reached. Pay careful attention to not burn or over cook the chicken.

Once done, remove from heat and place onto a cooking rack or plate covered with paper towels. We want to remove any excess oil from the cooking process.

Once cool, slice a homemade biscuit in half and top with sauce. Enjoy!
