Preparation

Homemade hamburger buns are super simple and way better than anything you can buy at the grocery store or local bakery. Nothing beats that fresh out of the oven smell.

In a small saucepan combine 3 tablespoons of water, 3 tablespoons of whole milk and 3 tablespoons of all purpose flour. Whisk all the ingredients together until no lumps remain. Place the saucepan over low heat and cook the mixture, whisking constantly. until thick and the whisk leaves lines on the bottom of the pan. Transfer the mixture to a small bowl and let it cool to room temperature.

In a stand-up mixing bowl combine warm milk (105 °F), sugar, and active dry yeast. Whisk the contents well and allow to sit at room temperature for 10 minutes or until the mixture is bubbly. Next, add the kosher salt, one egg and whisk to combine. Add all purpose flour, milk powder, melted butter and the cooled flour mixture. Mix by hand or mixer until a smooth, elastic dough forms.

Shape the dough into a ball and transfer it to a medium size mixing bowl. Cover the bowl with plastic wrap and let it proof at room temperature for an hour or until doubled in size.

Place the dough onto a lightly floured surface. Divide the dough into 8 equal pieces and form round balls. Place the pre-shaped buns on a piece of parchment paper leaving about 2 inches between each other and cover the buns loosely with plastic wrap. Let the buns rise at room temperature for about 1 hour or until puffy.

Whisk together 1 egg yolk with 1 tablespoon of milk. When ready to bake, lightly brush the buns on a baking sheet with the egg wash and sprinkle with sesame seeds, if desired. Place the buns into the oven and bake for 12 minutes. Melt 1 tablespoon of salted butter and set aside.

Time: 12 Minutes

Bake the buns until light golden brown which should approximately be around the 12 minute mark. When done remove the buns from the oven and immediately brush them with melted butter. Cool the hamburger buns for 10 minutes on a wire rack.
