Preparation

Sourdough bread is easy to make and way better than anything you can get at the grocery store or local bakery. By carving out an hour of your day here and there you too can make this delicious treat.

Mix together in a large bowl the flour and water. For this sourdough we'll be using a 66% hydration. Mix the ingredients together until all of the flour has been incorporated into the dough. Once complete let it sit for 30 minutes.

Next we will add the salt and starter and mix until all of the ingredients are well incorporated. Allow the dough to sit for another 30 minutes.

Next we will want to stretch the dough and we will do this every 15 minutes for a total of three times. Once complete set the dough aside somewhere warm and allow it to ferment. This process usually takes around 3-4 hours, however, we know the fermentation step is complete when the dough has almost doubled in size.

When fermentation is complete we will want to pre shape the dough. Let the dough sit for 15 minutes then do a final shaping and place into a basket dusted with rice flour.

At this point we have a choice to make. We may either cold proof the dough in the refrigerator and bake when we are ready or allow the dough to proof for an hour or two and bake right away.

When ready to bake set your oven to 450 °F and bake with 100% steam for 25 minutes. When complete set the steam to 0% and bake for an additional 20 minutes to form that perfect golden crust. Remove from the oven and allow to cool, serve, and enjoy.
