Grilled Chicken with Maple Glaze

1/2 cup Maple Syrup 419
1/8 tsp. Cinnamon 1
1/8 tsp. Ground Cloves 1
1/8 tsp. Cayenne Pepper 1

Preparation

In a small sauce pan mix the maple syrup, cinnamon, freshly ground cloves, and cayenne pepper over medium heat and simmer for a couple of minutes to incorporate all of the ingredients and flavors together. The glaze is done when the consistency coats the back of a spoon.

Meanwhile, generously season the bone in split chicken breast with salt, freshly ground black pepper, and garlic powder. Grill over hot coals until the desired internal temperature is reached. The USDA recommends an internal safe temperature of 165 °F.

When the chicken breast has reached your desired internal temperature apply the maple glaze and grill for an additional minute to allow it to set. Once set, pull the chicken breast from the grill and allow it to rest for 5 minutes. Slice the chicken breast into 1 ounce medallions and garnish with your favorite sides.

Parings

This dish pairs exceptionally well with a white wine like Chardonnay and/or Sauvignon Blanc. If you prefer a red wine try a Pinot Noir.

While the maple syrup is generous on calories the amount used for the glaze approximately equals one tablespoon at most per serving (~53 cal. / serving). Add the 3 ounces of chicken and this guilt free meal really packs a flavorful punch!
