Preparation

Chicken tenders bring back memories from my childhood. Now that Kate is exploring new and different types of food it was time to introduce her to our version of the chicken tender. This simple to make meal packs a ton of flavor and will satisfy even the pickiest of eaters.

We start by slicing the chicken breast into evenly sized strips. Try to cut them to the same size to make the deep frying process and cook times easier to manage. Lightly season the chicken with kosher salt and freshly ground black pepper keeping in mind that the flour dredge will also contain salt and other seasonings.

Heat peanut or canola oil to 350 °F in a tall frying pan.

In a large bowl add the flour, kosher salt, freshly ground black pepper, garlic powder, onion powder, and corn starch. Mix thoroughly to evenly distribute the seasoning in the dredge. In another medium size bowl add an egg and whisk until the egg whites and yolk are one. Dip each chicken tender into the egg yolk then toss into the flour dredge.

Gently shake the chicken tender to remove any excess dredge prior to placing in the hot oil. Fry each chicken tender until the internal temperature reaches 160 °F. One trick to determine when getting close to doneness is that the item being fried will float to the surface and the bubbles created by frying have reduced in intensity.

Remove the chicken tenders from the hot oil and place onto a wire cooling rack. We do this to let the excess oil drain completely from the chicken and keep the beautiful crispy skin you just made crispy! When cool serve and enjoy!
