No Knead Sandwich Bread

Preparation

In a medium size mixing bowl, whisk together warm water, sugar and active dry yeast. Let the mixture sit at room temperature for 10 minutes.

Next, add in the melted butter, kosher salt, and bread flour. Using a wooden spoon, mix all the ingredients until the dough forms. Knead the dough for 2 minutes with your hands and form the dough into a ball. Place the dough back into the bowl, cover with plastic wrap, and let it rest for 30 minutes. This phase of bread making is known as autolyse. During this stage, the dough begins to develop the gluten necessary for a no-knead bread.

Next, remove the dough from the mixing bowl and knead it for 2 to 3 minutes. Shape it into a ball and place it back in the bowl. Cover with plastic wrap. Let the dough rise at room temperature for 2 hours.

Place the dough onto a lightly floured surface and shaped it into a 9 inch long log. Place the pre-shaped loaf into a lightly greased bread pan. Cover the pan with plastic wrap and let it rise for another 2 hours. When the dough has crowned one inch over the rim of the pan, pre-heat the oven.

Beat an egg with one tablespoon of water and brush the top of the loaf with egg wash. Place the bread into the oven and bake for 20 minutes with 100% steam.

Step 2 - Bake With Steam

Time: 20 Minutes

After baking for 20 minutes with 100% stream reconfigure your oven to turn the steam off and bake the bread for another 15 minutes.

Temperature: 350 °F
Steam: Off
Time: 15 Minutes

When the bread top has reached a nice golden brown color, remove the loaf from the oven and allow it to cool on a wire rack. Let the bread cool completely before slicing to preserve a nice even texture.
