Preparation

A few posts back we made roast turkey breast and while delicious we knew it needed improvement. For this post we are taking the same recipe and adjusting the Anova Precision Oven cook times to make an even better version of roast turkey breast. Below are the new cook times using the Anova Precision Oven.

Step 1 - Pre Heat

Heating Elements: Rear
Sous Vide Mode: On
Temperature: 150 °F
Steam: Off

Step 2 - Roast

Heating Elements: Rear
Sous Vide Mode: On
Temperature: 150 °F
Steam: Off

Probe Target: 140 °F

Step 3 - Sear

Heating Elements: Top, Rear
Sous Vide Mode: Off
Temperature: 482 °F
Steam: Off

Time: 8 Minutes

Subtracting two minutes during step 3, the sear process, completely changes the outcome of the skin.
